extra lean minced beef
1
red onion, finely chopped
2
garlic cloves, crushed
1
red pepper, finely sliced
1
x 400g tin chopped tomatoes
1
red chilli, finely chopped
1
x 400g can red kidney beans, drained & rinsed
600ml
beef stock
salt
& pepper
In
a preheated pan, dry fry the minced beef until browned. Sppon into a
sieve and drain away any fat.
Add
onion to pan and cook 2-3 mins until soft. Add garlic and red pepper and
cook 2-3 mins. Add tomatoes, chilli, kidney beans and stock together with
the meat. Bring to a gently boil and simmer for 20 mins to allow the soup
to thicken.
Season
to taste and serve.
