Prawn & Spring Onion Soup

bunch spring onions, sliced
1
clove garlic, crushed

tbsp fresh ginger, grated

peeled prawns
900ml
chicken stock
1½
tbsp sherry (½pt)
250g
sweetcorn, canned or frozen
salt
& pepper
Place
all ingredients except prawns, in a large pan and bring to the boil.
Simmer 10 mins. Add prawns and heat a few more minutes to warm the prawns
through. Serve
