Gingered Prawn & Spring Onion Soup

Serves 4

Full Choice 2 pts per serving

No Count  ½ pt the whole recipe

1 bunch spring onions, sliced
1 clove garlic, crushed
1 tbsp fresh ginger, grated
225g peeled prawns
900ml chicken stock
1½ tbsp sherry (½pt)
250g sweetcorn, canned or frozen
salt & pepper


Place all ingredients except prawns, in a large pan and bring to the boil.  Simmer 10 mins.  Add prawns and heat a few more minutes to warm the prawns through.  Serve
