Cranberry Relish

Cranberry Relish

Serves 12
½ pt per serving

1 medium orange, washed
480 g cranberries, thawed if frozen
1-2 tbsp icing sugar

Roughly chop the whole unpeeled orange.  Blend it in a food processor until almost a pulp.  Add cranberries and sugar and blend until the cranberries are finely chopped.


Spoon into a dish, cover and refrigerate until required.  It will keep several days in the fridge.
