Tandoori Chicken Loaf

Tandoori Chicken Loaf

Serves 6

20 pts the full recipe:  3½ pts per portion

1 tbsp oil
2 onions, chopped
2 cloves garlic, crushed
½ tsp ground cumin
1 tsp garam masala
1 tbsp lemon juice
1 tbsp tomato puree
2 tbsp Pataks mango chutney
500g cooked chicken
2.5 cm (1") fresh ginger, peeled and chopped
50g raisins
50g no need to soak apricots, chopped
1 egg, beaten
salt & pepper

Lighlty oil a 500g (1lb) loaf tin.  Heat the remaining oil and add the onion and garlic.  Cook until softened.  Stir in the garam masala,  cumin, lemon juice, tomato puree and chutney.  Process onions, spices, chicken and ginger until smooth, stir in the raisins and apricots and egg.  Season and press into tin.  Cook for 20-30 mins Gas 4.
