Tiramisu

Tiramisu

Serves 2

3½ pts per serving
2½ pts per serving on Core

1 x Weight Watchers double chocolate muffin (3½pts)
75ml strong black coffee
50g virtually fat free plain fromage frais
40g quark cheese
1 heaped tsp icing sugar (1pt)
a drop vanilla essence
1 tsp cocoa powder (½pt)


Break up the muffin into pieces, put a layer into the bottom of 2 ramekins, using about 1/3rd.  Pour over 1/3rd of the coffee.  Mix quark and fromage frais, icing sugar and vanilla essence. Spread half the mixture over the muffin.  Add another layer of muffin, coffee then remaining cheese.  Top with any remaining muffin.  Sprinkle with cocoa powder, cover and refrigerate for 30mins

200 g quark
200 g very low-fat plain fromage frais
400 g Tesco Low Fat Ready to Serve Custard
10 item(s) Tesco Sponge Finger
2 finger Cadbury's Twirl
1 teaspoon Canderel Canderel Spoonful
1 teaspoon vanilla essence
1 tablespoon coffee


*make up the coffee with boiling water.
*lay the sponge fingers in a dish and cover with coffee until saturated.
*beat together the fromage frais, quark and custard with sweetner and vanilla essence to taste.
*spoon over the sponge and put in fridge to set for a couple of hours
*Just before serving, crumble up the twirl and sprinkle on top.

250g Quark

4 tbsp low fat plain yogurt

1 tbsp splenda or more to taste

½ tsp vanilla essence

125ml strong black coffee

2 tbsp Tia Maria or Kahlua

16 sponge fingers

1 tsp cocoa powder

 

Beat together the quark, yogurt, splenda and vanilla essence to make a smooth cream.

 

In a shallow bowl, mix the coffee and Tia Maria.

 

Choose 4 attractive glasses or serving dishes.  Dip the sponge fingers into the coffee one at a time, letting them soak for 10-20 seconds.  Arrange them in the glasses as you go, alternating them with the quark mixture, starting with the biscuits and ending with the quark mixture.

 

Chill for at least 30 mins then serve, sprinkled with cocoa powder.


TIRAMISU

Serves 4

Just under 4 Syns per serving

2 tsp. coffee powder, preferably Espresso (maybe, add another tsp. if the coffee blend isn't strong)
1 tbsp. Tia Maria or equivalent - 1 Syn (based on 25ml being 3.5 Syns)
3 level tbsp. maple syrup - 6 Syns
250g Quark
Half tsp. vanilla extract
100g FF vanilla yoghurt
8 trifle sponge fingers - 8 Syns

Stir the coffee powder/granules into 50ml boiling water. Cool.
When cooled, stir in the Tia Maria and 1 tbsp. of the maple syrup.
In a bowl, beat the Quark, vanilla extract and remaining maple syrup until smooth.
Stir in the yoghurt.
Break the sponge fingers in half. Dip 2 pieces quickly into the coffee mixture and put into a shallow glass dish or a small glass.
Repeat with the other 3 dishes. Spoon over some of the Quark mixture, then repeat with the other sponge fingers and remaining Quark mixture.
Chill in the fridge for at least an hour.

Depending on how many Syns I have to spare, I sometimes up the amount of sponge fingers and sprinkle the top with some Synned cocoa powder or a little grated chocolate. One square of chocolate, grated, goes a long way and definitely adds to the taste.
