Polenta Pudding

Polenta Pudding

Serves 6

Points plan 2pt  per serving
Core 1pt  per serving

90g polenta
700 ml skimmed milk
2 sachets options Belgian chocolate
1 vanilla pod
3 tbsp Canderel
100 g raisins
frylight

-Bring the milk and options sachets to the boil. Slice the vanilla pod in half lengthways and scrape out the seeds into the pan.  Throw in the pod as well. Add the raisins. Throw in the polenta and the Canderel and cook, stirring constantly, for 4 - 5 min. Pour onto a baking tray (around 1cm thickness) and leave to cool.
-Cut the polenta into pieces and fry in a non-stick pan sprayed with frylight.
-Serve hot.


Nice served with fruit eg raspberries and yogurt or fromage frais, sweetened slightly with canderel or splenda.
