Juicy Peach Meringues

4 fresh ripe peaches, halved and stoned
4 large strawberries, sliced
4 tsp cherry brandy or sherry
2 egg whites
30g caster sugar
Preheat oven to 190ºC/375ºF/Gas 5
Cut a tiny slice from the base of each peach half, so that
they stand firmly and do not move when arranged on a baking sheet. Pile
the strawberry slices into the middle of the peach halves. Put 1 tsp cherry
brandy into the middle of each one.
In a clean, greasefree bowl, whisk the egg whites
until they hold their shape, then whisk in the sugar until stiff and
glossy. Pile equal amouts onto the top of the peach halves.
Bake 5-6 mins until golden brown. Serve at once
