Ginger Poached Pears

Ginger Poached Pears

Serves 6

Points plan 1½ pts per serving
Core ½ pt per serving

150ml apple juice
2 tbsp sugar
4 cloves
4 pieces stem ginger, finely sliced
6 ripe pears, peeled

Put apple juice, sugar, cloves and ginger into a pan and add the pears.  Top up with water to just cover the pears.  bring to the boil, reduce heat, cover and simmer for 10-12 mins until the pears are tender.

Lift pears out of liquid with a slotted spoon and leave to drain.

Bring the liquid to a boil and continue to boil until reduced by half. 

Serve the pears with a little of the juice.

Core: To make this completely core, use diet lemonade instead of apple juice, sweetener instead of sugar and fresh ginger instead of stem ginger.  After reducing the liquid, strain to remove the ginger if you prefer not to eat it.
