Sweet Potato Puffs
1.5 points each (makes 10)
2 lb sweet potatoes
80 ml orange juice
1 large egg
1 serving(s) orange peel
1/2 g nutmeg
30 g Pecans

Peel and cut sweet potatoes into 1 inch pieces. Place the
potatoes in saucepan and add enough water to cover, bring to a boil over a
medium heat. Cook 10 to 15 mins until tender.
Drain potatoes and place in a large bowl and mash until
smooth.
Add the rest of the ingredients except chopped pecans and
mix well. Preheat oven to 180.
Spray baking sheet with frylight. Spoon mix into 10 mounds.
Sprinkle chopped pecans on top. Bake for 30 minutes.
