Chicken Breasts with Orange
and Ginger
Serves 4
Points per serving 3½
4 medium chicken breasts, skinless & boneless
2 yellow peppers, deseeded and cut into thick strips
2 large courgettes, cut into chunks
1 tbsp stir-fry oil or sesame oil
2.5 cm (1") piece fresh ginger, peeled & grated
finely grated rind and juice 1 orange
16 cherry tomatoes
salt & pepper
Preheat oven to 200ºC/400ºF/Gas 6
Slash the chicken breasts on the surface 3 or 4 times, then
put them into a roasting pan with the peppers and courgettes. Add the oil
and toss everything together. Season and roast for 20 mins.
Mix the ginger, orange rind and juice. Drizzle over
the chicken and veg. Add the tomatoes and roast for a further 10-15 mins
until the chicken is done.
Serve hot.
