Fruitful Mincemeat

Fruitful Mincemeat

Makes 3 x 1lb jars (48 x 1oz servings)
1 pt per 1oz serving (Original points)

240 g raisins
240 g sultanas
240 g currants
60 g ready to eat, dried apricots, chopped finely
60 g glace cherries, halved and rinsed
60 ml brandy
1 medium pear, peeled, cored and finely chopped
1 medium eating apple, peeled, cored and finely chopped
½ tsp cinnamon
½ tsp nutmeg
180 g molasses sugar
2 tbsp lemon juice
2 tbsp water
2 tbsp margarine

Put raisins, sultanas, currants, apricots, and cherries in a large bowl with the brandy.  Mix well, cover and leave overnight in a cool place. (min 4-6 hours)

Blanch the pear and apple in boiling water for 2 mins, drain well.  Add to dried fruit with the cinnamon and nutmeg.  Stir well.

Put sugar, lemon juice, water and margarine into a small pan, heat gently, stirring until sugar is dissolved.  Pour mixture over the fruit and stir well.


Pack into sterilized jars, seal and label.
