Instant Spiced Christmas Pudding
Serves 10
3 pts per serving
1 tsp sunflower oil
180 g dried apricots, chopped
120 g raisins
120 g sultanas
grated zest and juice of 2 large oranges
3 dessert apples, cored and grated
60 g molasses sugar
2 eggs
2 tsp ground cinnamon
1 tsp ground nutmeg
240 g brown breadcrumbs
2 tbsp brandy
Grease a 2pt (1.2 litre) pudding bowl with the oil and
line the base with greaseproof paper.
Place apricots, raisins, sultanas, orange zest and juice in
a large bowl. Add remaining ingredients, except the brandy, and mix well.
Spoon into pudding basin and level off top.
Cover basin with a double thickness of foil and tie securely
around the rim with string.
Steam for 2½ hours. Allow pudding to cool for approx
20 mins before turning out.
Top with a sprig of holly, pour over brandy and set alight!
