Deluxe Mince Parcels

Makes 12

1½ pts per serving (Original points)

120g (4 oz ) mincemeat 
2 ripe bananas, diced finely
1 dessert apple, peeled, cored and chopped finely
6 large sheets filo pastry (Jurol 2 pts per sheet)
1 egg beaten
pinch salt
icing sugar to dust

Prehat oven to Gas 6/200ºC/400ºF

Mix mincemeat and fruit together, set to one side.

Lay a sheet of filo onto work surface.  Brush with egg and top with a second sheet, brush again and top with a third sheet.  Cut into 6 squares.  Spoon a heap of mincemeat onto each square, draw up the sides to form a ruffle.  Repeat with remaining filo pastry.


Place parcels onto a non-stick baking tray and brush with egg.  Bake 6-7 mins until golden.  Dust lightly with icing sugar and serve warm.
