Creamy Cardamom Chicken

Serves 4

300g chicken breasts, skinless & boneless, chopped
1 red onion, thinly sliced
2 garlic cloves, finely chopped
1 tsp cardamom pods
1 tsp ground turmeric
1 tsp ground coriander
½ tsp ground ginger
150ml chicken stock
300g 0% total greek yogurt
1 lemon, juice only

Heat a pan and spray with frylight.  Add the chicken and cook for 1-2 mins until seales.  Add the onion and garlic and cook for 1-2 mins more.

Lightly crush the cardmom pods and remove the black seeds.  Grind the seeds to a powder and sprinkle over the chicken.  Add the spices and cook 1-2 mins, stirring.

Pour in the stock, yogurt and lemon juice.  Season and cook for 3-5 mins until the chicken is cooked and the sauce has reduced and thickened.


Serves with rice.
