Spicy Fat-Free Mincemeat

Makes 3lb (1.5kg)

225g (8oz) mixed dried fruit
150g (5oz) cooking apples, peeled and grated
1/2 teaspoon mixed spice
150ml (1/4 pint) sweet cider
2 teaspoons rum

Place the dried fruit in a saucepan. Add the grated apple, mixed spice and cider.
Simmer for 20 minutes or until the mixture has formed a pulp and most of the liquid has evaporated.

Stir in the rum. Pack in sterilized jars and store in the refrigerator until required.
