Oriental Duck and Noodles

Serves 2
2 skinless duck breasts or 250 - 300 g duck fillets
100 g noodles
6 baby sweetcorn, sliced
1 courgette sliced
1 small red pepper, de-seeded and sliced
8 small spring onions cut into 2
1 chicken stock cube
1 pak choi,sliced

Marinade
3 tablespoons soy sauce
juice of 1 orange + the zest of about half of the orange
teaspoon whole grain French mustard
half chilli, chopped and deseeded
half an inch finely chopped root ginger
1 clove garlic sliced.
Mix all the marinade ingredients together. Cut the duck into slices(if breasts used).Place in the bowl with the marinade, cover and leave in a cool place for at least 20 minutes. (do not use a metal bowl)

When you are ready to serve the meal, cook the noodles.
Meanwhile heat a large frying pan or wok until hot, stir fry the duck(
retaining the marinade) for about 5 mins, meanwhile dissolvethe stock cube in 2
oz boiling water.
Add all veg except for the pak choi and stir fry for another 2 - 3 minutes, our
in the remaining marinade and stock, add the pak choi and then noodles.
Mix well and cook for another 2 minutes until noodles are
warmed through.
