Veggie Bake

Serves 4

No Count 3 pts per serving

frylight
1 red pepper, chopped
1 yello pepper, chopped
2 courgettes, chopped
1 aubergine, chopped
280g rice ( dry weight)
300ml passata
110g gruyere cheese, grated.

Preheat oven to 180ºC/gas 4

Heat a pan and spray with frylight.  Cook the peppers, courgettes and aubergine for 5-10 mins until softened.  Put into an ovenproof dish with the rice and passata.

Sprinkle the cheese on top and bake for 15 mins.
