Gigantes

Gigantes

Serves 4 as accompaniment or 2-3 as main
Whole recipe=10.5pts  (points plan)

Core recipe

2 x cans butterbeans in water
3 x carrots finely diced
jar passata + 1/2 jar water
2 tbsp fresh parsley
2 tbsp fresh corriander
3 cloves garlic
2 tbsp veg bouillon
2 tbsp olive oil

Put all ingredients in a casserole dish & stir.

Cook at about 180 for 1-1.5hrs until water is absorbed.

This is a traditional greek recipe which is nice served with salad, a little feta and some fresh bread or wholemeal pitta
