Chestnut &
Vegetable Burgers

125g plain
couscous
150ml
double-strength veg stock
1 onion,
finely chopped
2 cloves
garlic, crushed
2 carrots,
grated
1 courgette,
grated
200g vacuum
pack whole chestnuts, very finely chopped (5pts)
1 egg beaten
3 tbsp
chopped fresh chives
1 tsp dried
marjoram
1 tsp dried
thyme
Place
couscous in a bowl, cover with stock and leave to stand for 15 mins.
Meanwhile fry
the onion, using frylight, until beginning to soften. Add the garlic,
carrot and courgette and cook for a further 5 mins.
Mix all the
ingredients together and shape into 8 burgers.
Grill the
burgers under a medium grill for 15 mins, turning halfway through.
