Lentil one-pot casserole

Core recipe

Points plan 2½ pts per serving

Serves 4

200 g green & brown whole cooked lentils, (green)
125 g dried rice, (brown)
2 large carrots, grated
2 stock cube, (vegetable) made up with 850ml water
1 clove garlic, crushed
5 large leaf basil, roughly torn up
1 pinch salt
1/4 tsp pepper

Rinse lentils.

Place all ingredients less the seasoning and basil in a large pot. Bring to a boil. Reduce heat, cover and cook until rice is done, about 30 minutes. Season to taste and stir through basil then serve
