Spicy Moroccan Butternut Squash & Bulgar Wheat Stew

Spicy Moroccan Butternut Squash & Bulgar Wheat Stew

1/2 Butternut squash, cubed
1 can tomatoes
2 carrots
600 ml veg stock
1 tsp each of cumin, ginger, cinnamon
2 tsp harissa paste
4 tbsp of bulgar wheat


Simmer all ingredients for 10 min, then add bulgar wheat until cooked through - should be about 25-30 min in total.
