Gingered Noodles & Vegetables

Gingered Noodles & Vegetables 

Serves 2-3

Points plan:  2.5 points/serving based on 3 people

Core recipe

frylight
2-3 tsp Epicure "very lazy" ginger*
1 tsp Epicure "very lazy" garlic*
1 sliced onion
1 carrot, sliced thinly diagonally
2 celery stalks, sliced diagonally
100g beansprouts
200g mange tout, trimmed
500g cooked egg noodles
freshly ground black pepper


Heat a wok or large frying pan and spray with frylight.  Add ginger and garlic and gently stir-fry for 1 minute.  Stir in onion and carrot, then stir-fry for 4-5 minutes, adding more Frylight if necessary.

Add celery, beansprouts and mange tout, stir fry for further 2-3 minutes.  Stir in noodles, and stir fry for 3-4 minutes or until noodles are heated through.  Season to taste and serve immediately.


  • Epicure very lazy garlic and ginger can be found in jars alongside the herbs and spices section of most major UK supermarkets
