Mixed Bean Chilli

Mixed Bean Chilli

Serves 4

2 pts per serving
Core recipe

1 large onion, chopped
2-3 garlic cloves, crushed
2 tbsp water or veg stock
pinch chilli powder or to taste
1 tbsp tomato puree
1 tbsp paprika
400g tin chopped tomatoes
400g tin kidney beans, drained
400g tin cannelini beans, drained
500g mixed sliced veg (eg carrots, peppers, courgettes etc)

Cook onion, garlic and chilli in the 2 tbsp stock for 5 mins.  Add tomato puree and paprika and cook 2 mins. 


Add tomatoes, beans and veg.  Stir, bring to the boil and simmer for 20 mins until veg are tender.  Serve
