Spiced Bean Casserole

Spiced Bean Casserole

Serves 2

Points plan:  5 points/serving
Core recipe

1 onion, chopped
1 garlic clove, crushed
225g tinned tomatoes
0.5-1 tsp mild chilli powder
0.5 tsp tomato puree
25g plain flour
150ml vegetable stock
115g courgettes, sliced
175g red/green peppers, sliced
225g tinned red kidney beans, washed and drained
225g tinned haricot beans, washed and drained
115g sweetcorn
seasoning



Dry fry onion and garlic in a non-stick pan until soft.  Add tinned tomatoes, chilli powder, tomato puree and flour and mix well.  Stir in veggie stock, then add the courgettes, peppers, beans and sweetcorn.  Season to taste.  Bring the boil and then cover and simmer for 10-12 minutes until the veggies are tender.
