Quinoa & Rice Pilaf

Quinoa & Rice Pilaf

Serves 4

4 pts per serving
Core recipe

1 tbsp olive oil
1 onion, chopped
120g brown rice
120g quinoa
600ml veg stock
150g peas
salt & pepper
handful fresh parsley chopped
squeeze of lemon juice

Place oil in large pan, add onion and cook for 5 mins.

Add rice, quinoa and stock and stir well.

Bring to the boil, reduce the heat and simmer for 20-25 mins until the liquid is absorbed and the grains are tender.

Add peas and cook for 3 mins.


Season, stir in parsley adn lemon juice, fluff up and serve.
