Quorn Scotch Eggs

Quorn Scotch Eggs 

Makes 3 big ones at 2.5 points each
Core recipe

Ingredients:

175 g quorn mince
1 medium onion(s)
1 egg white
1/2 tsp dried sage
3 medium egg(s)
30g dry polenta

1) - Whizz quorn mince, onion (diced finely), egg white and sage in a blender to sausagemeat consistency.
2) Boil three eggs.
3) Wrap 'sausage meat' around eggs then roll in the breadcrumbs.
4) Put on a baking tray (I lined mine with greaseproof paper) and bake for between 20-30 minutes at about 220ºC
