Salad Dressing

onion, finely chopped
1 clove
garlic, crushed
¼ tsp mustard
powder
1 tsp lemon
juice
salt &
pepper
150g natural
yogurt
Mix all
ingredients together well and use.
Creamy Salad Dressing

candarel or splenda
Mix all the
above together and let it sit in the fridge until needed. It's heavenly over
rice and couscous salads.
It's great on
a baked potato too! You can add grated drained cucumber, onions, all sorts!
Also - if you
place that greek yoghurt in a colander lined with a new clean jeycloth overnight,
it turns into a thick 'cream'. I put it in the cloth then tie the cloth up over
the tap and let it drip into the sink all night. It’s a definite treat
Honey Mustard Dressing

100ml natural
yogurt
1 tbsp cider
vinegar
2 tsp Dijon mustard
2 tsp honey
salt &
pepper
Mix all
together thoroughly.
Creamy Garlic & Chive Dressing

10 garlic
cloves, peeled
100g extra
light philly
50g plain low
fat yogurt
2 tbsp chopped
fresh chives
salt &
pepper
Place garlic
in a pan with some water, bring to the boil, reduce heat and simmer for 10
mins. Remove garlic, drain on a paper towel and reserve 2 tbsp of the
cooking liquid. Blend the garlic, reserved liquid, yogurt, cheese
together until smooth. Stir in the chives, salt and pepper.
Refrigerate for at least 2 hours. Stir before serving.
Tomato & Basil Salad Dressing

2 ripe tomatoes
half small garlic clove, crushed (optional)
6 large basil leaves, shredded
half tsp red or white wine vinegar
half tsp tomato puree
salt & pepper
Cut a cross in the base of each tomato, place in a bowl & cover with boiling water. Leave to stand for 1 minute. Drain, then peel off the skins and roughly chop the flesh & seeds. Place in a blender with the remaining ingredients & whizz to a smooth puree. Add a little cold water to thin the dressing down if you wish

half tsp red or white wine vinegar
half tsp tomato puree
salt & pepper

Thai salad dressing

1 tbsp lime juice
1 tbsp soy sauce
half tsp granulated sweetener
2 tbsp cold water
half a chilli, deseeded & chopped
2 tbsp freshly chopped coriander
Simply stir al the ingredients together in a small bowl, & set aside for a few mins to allow the ingredients to mingle
