Pumpkin and Lemon Lentils

Core recipe

Points plan:

Whole recipe 6½ pts

Per serving 1½pts

1 medium onion chopped
6oz red lentils
450ml veg stock
14oz pumpkin diced
3 tbsp lemon juice
grated rind 1 lemon
1 tsp fresh grated ginger
2  tbsp chopped fresh coriander
1 tsp ground cumin
salt and pepper

Place onion and lentils in pan with stock.
Bring to boil. Simmer 15 mins.
Add pumpkin, lemon juice, herbs, rind, spices and ginger. Stir well.
Bring back to boil. Simmer 25-30 mins. until pumpkin is tender.
Season to taste.
