Gammon & Pineapple Snack

Gammon & Pineapple Snack  

Serves 2

Core points per serving: ½

115g rindless lean gammon steak
1 slice canned pineapple in juice or 1 slice fresh
175g cottage cheese
2 barbecue snack a jacks or cheese ones are nice
small bunch chives
pepper

Preheat the grill to a hot setting.  Place the gammon on the grill rack and cook for 3-4 mins on each side until lightly golden & cooked through.  Allow to cook & cut into thin strips.
Cut the pineapple into small pieces.  Pile cottage cheese onto the snack a jacks, top with pineapple and gammon strips.  Snip fresh chives over the top and season with black pepper.
