onion, chopped

clove garlic, crushed

tsp ground cumin

tsp ground coriander
pinch
curry powder
450g courgettes,
chopped
225g
potato, diced
600ml
veg stock
salt
& pepper
Fry
the onion & garlic in the frylight gently for 5 mins. Add spices and
curry powder, cook 1 min. Add courgettes and potato and pour in the
stock. Simmer approx 20 mins until veg are soft.
Blend
the soup, season to taste and serve.
