Pineapple Upside Down Cake

Pineapple Upside Down Cake

Serves 8

Points per serving 2½ (original points)

4 oz self raising flour
4 oz caster sugar
1 medium egg
4 oz Flora Flora Diet
1 medium pineapple
4 spray Fry Light Sunflower Oil Spray

Core the pineapple and slice in to thin pieces then spray a medium cake tin with oil and line the bottom with the fruit.


Add the sugar and the flora to a bowl and mix until cream then slowly fold in the egg. When the mixture is even add the flour, when mixture is firm pour in to the tin over the pineapple and bake in the oven at 200ºC for 20 minutes.
