Spinach,
Spring Onion and Soft Cheese Soup
Serves 4
2 tsp Veg. oil
1 garlic clove crushed ( i used more than one )
1 bunch spring onions finely chopped
1 pint Veggie stock
240 gm fresh spinach
1 pack of 200 gm low fat soft cheese
salt and pepper
4 tsps cornflour
300 ml skimmed milk
chopped fresh parsley or spring onions to garnish.
1) Heat the oil in a large saucepan and saute the garlic and spring onions for
a few minutes until softened , but not browned
2) Add the stock and the spinach then heat and simmer covered for 10 minutes
3) Transfer the mixture to a blender or a liquidiser and add the sift cheese.
Blend until smooth and velvety. Return to the saucepan and season with salt and
pepper.
4) Blend the cornflour in water and add to the soup along with the milk,
stirring constantly until slightly thickened . Cook gently and ladle into bowls
. Serve at once with the garnish.
