Lemon roasted zero veggies

Mixed no point veggies to
your liking, I like to use:
asparagus
courgette
red onions
mixed peppers
2-3 tsp olive oil
juice/zest half a lemon
2 cloves garlic sliced
Preheat oven to gas 6, 200C,
400F.
Put prepared veggies into roasting pan together with sliced garlic.
Mix oil/lemon juice/zest together.
Pour over veggies and mix well.
Roast in oven 30-40 minutes, turning once during cooking.
The oil is the only pointed
item so 2 tsp is 1.5 pts and 3 tsp shows as 2.5 pts. So around half a point per
serving. Don't make the mistake of moving the veggies around too much or they
will break up.
