SMOKED MACKERAL & NOODLES WITH CUCUMBER.


300   g EGG NOODLES, cooked according to directions and drained  
2   smoked mackerel fillets  
2   tablespoons soy sauce  
1   teaspoon fresh ginger, grated  
1   garlic clove, finely chopped  
1/4   cucumber, finely sliced  
1   bunch green onions, finely chopped  
2   tablespoons coriander, finely chopped  

Mix together the soy sauce, ginger and garlic along with 1 tbsp water to make a dressing.
Rinse the noodles under cold water and return to a large bowl.
Toss with the cucumber, onions and coriander.
Pour over half the dressing.
Skin and break up the mackerel.
Serve the noodles topped with the mackerel and remaining dressing.
