MUSHROOM & TOMATO SOUP
Here I go again ..
AND BELIEVE ME THIS ONE IS ABSOLUTELY DELICIOUS !!
1/2 cup dried porcini mushrooms
1 can of chopped tomatoes
1 cup chooped onion
1 tbsp minced garlic
mushrooms , coarsely chopped
4 tbsp chopped parsley
1/2 tsp crushed red pepper flakes ( I use more than this )
800 ml or so of chicken stock
Cover the porcini mushrooms with hot water and let it soak for abt 15 minutes.
After that , remove and chop them finely. Do not discard the water.
Puree the tomatoes in processor until smooth and set aside.
Heat a large pot and spray oil.
Add the onion and garlic. Saute for abt 3 minutes.
Add the porcini and the other mushrooms. Saute until tender.
Stir in the parsley and red pepper flakes.
Add the pureed tomatoes, the chicken stock and soem of the porcini soaking
liquid that was kept aside. Be careful here as the bottom of that liquid will
have some sediment .. discard that.
Bring to a boil and then reduce heat and simmer until flavour blends. Season
with salt and pepper.
