SPICY CHICKEN CURRY

 SPICY CHICKEN CURRY

 

Chuck the chicken breasts and get yourself some lovely bony chicken thighs. Much juicier .

Chicken Thighs - 2
Chopped garlic - 2 cloves
Chopped Ginger - 1 tbsp
Chopped onions - 1 medium
Cinnamon powder - 1/4 tsp
Cardamom powder - 1/4 tsp
Clove powder - a lil bit more than a pinch
Turmeric pwd - 1/2 tsp
Red Chilli powder - 1 tsp ( oh go ahead and add some more if U like it HOT ! )
Corriander pwd - 3 tsp
Salt as per taste
Spray oil
Curry Leaves ( avlbl in Indian shops )

1. Defrost the chicken and cut each thigh into abt 4 pieces.

2. Spray a wok generously with spray oil ( abt 8-9 sprays )

3. Saute the onions till transparent.

4. Add the chicken and coat wel with the onions and fry till the chicken changes colour.

5. Add the garlic and ginger and fry for 2-3 minutes more.

6. Dissolve the turmeric , corriander and red chilli powder in abt 60 ml of water and add it to the pan. Then add abt 2 cups of water and boil. Then simmer on low heat till chicken is almost done .

7. Then add abt 8- 10 curry leaves and the cardamom , cinnamon and clove powders, and salt.

8. Cook till done.

This is super with Rice . Keep the gravy.

Highly recommended - after consuming the rice .. chuck your spoons and fork and eat the chicken with fingers .. Finger Lickin
