OATBRAN MUFFINS

OATBRAN MUFFINS

- 250g oatbran
- 50g raisins
- 50g soft brown sugar
- 1 tsp cinnamon
- 1 tbsp baking powder
- 290ml skimmed milk
- 2 egg whites
- 2 tbsp vegetable oil

Method:

1. Preheat oven to 220C/425F/Gas 7.

2. Combine the dry ingredients in a bowl.

3. Mix the milk, egg and oil together, and pour into the dry ingredients. Mix well. Leave to stand for 5 minutes to allow the oats to absorb some of the liquid.

4. Bake for 12-15 minutes or until pale brown.

Suitable for freezing (defrost for 20secs in microwave).
