Winter Warmer Soup
1 large onion, diced
2 garlic cloves
3 peppers, diced
4/5 sticks of celery, sliced
1 cup peas
4 slices bacon, fat removed
1 tin chopped tomatoes
500 g passata
mixed herbs
3/4 chicken oxo's
good handful of spaghetti, in 1" long strands
6 mushrooms
Lightly fry the onion, garlic, peppers, celery and peas. Add the bacon and mixed herbs, and fry for 1 minute. Add the tomatoes and passata and let it come to the boil, then add chicken oxo's
Top up with boiling water to your desired thickness
Add the mushroom and spaghetti. Simmer until the spaghetti is soft.
Season to taste
