Tiger prawn risotto with lobster sauce

1 tbsp olive oil

1 onion, chopped

175g risotto rice

4 tbsp white wine

780g jar French fish soup or lobster bisque

Salt and black pepper

2 tbsp fat free fromage frais

175g cooked, peeled tiger prawns

 

 

Preheat the oven to 150oC, gas mark 2.

 

Heat the oil in a saucepan and fry the onion for 5-6 minutes until softened. Stir in the rice and fry for 1 minute. Add the wine and cook for another minute. Pour over the fish soup and seasoning and bring to the boil.

 

Transfer to an ovenproof dish and bake for 35 minutes. Stir in the fromage frais and prawns and cook for 5 minutes until heated through.
