CHICKEN & SPRING ONION BURGERS

Serves 4

Points per recipe 19½

Points per serving: 5

 

500g chicken or turkey mince

6 spring onions, chopped finely

3 garlic cloves, crushed

2 tbsp chopped fresh parsley

zest & juice of 1 lime

low fat cooking spray

salt & pepper

 

To serve:

4 medium burger buns

2 tbsp tomato ketchup

salad leaves, tomato & cucumber

Mix the mince, onions, garlic, parsley, lime zest & seasoning.

 

Shape into 4 patties.  Heat non-stick frying pan and spray with low fat cooking spray.  Fry patties 5-10 mins each side until cooked through.

 

Split the buns and toast lightly.  Spread each half with ½ tbsp ketchup, arrange salad  on base  of bun and place burger on top.  Squeeze a little lime juice over, replace top half of bun and serve.
