Fish Pie

5 large potatoes, peeled and diced
2 medium eggs
150g fresh spinach
Salt and black pepper
1 tbsp olive oil
1 onion, finely chopped
1 carrot, finely chopped
2 tbsp plain flour
200ml skimmed milk
150g Quark (virtually fat free soft cheese)
115g half fat Cheddar cheese, grated
Juice of 1 lemon
1 heaped tsp English mustard
3 tbsp freshly chopped parsley
500g cod fillet, skinned and cut into strips

Preheat
the oven to 230oC, gas mark 8. Cook the potatoes in boiling salted
water for 10 minutes. At the same time, steam the spinach in a colander
over the boiling potatoes for 1 minute. In a separate pan hard boil the
eggs for around 8 minutes. Remove the spinach and squeeze out the excess
juices. Mash the potato with salt and pepper to taste. Cut the eggs into
quarters. Heat
the oil in a frying pan and fry the onion and carrot, add the flour and cook
for 1 minute. Blend in the milk and bring to the boil, stirring. Stir in the
Quark, cheese, lemon juice, mustard, parsley, salt and pepper. Put
the spinach, fish and eggs in an ovenproof dish. Pour over the sauce and top
with mashed potato. Bake for 25-30 minutes until golden. |
