Spicy Turkey Pilau
For No count, use spray oil and omit the raisins, or count
points for the oil and raisins

4 teaspoon oil (4pts)
300 g turkey fillet, cubed
1 onion, chopped
1 red pepper, sliced
1 clove garlic, chopped finely
1/2 teaspoon cumin seeds
1/4 teaspoon thyme
1/2 teaspoon turmeric
100 g dried rice
25 g raisins (1pt)
200 ml chicken stock
4 tablespoons natural low-fat yogurt
salt and pepper to taste
chopped parsley to garnish
Heat 3 teaspoons of oil in pan add turkey and fry til it loses its pink colour.
Remove from the pan. Heat remaining oil in pan add chopped onion, red pepper and
garlic and fry gently for 3-4 minutes. Stir in the cumin seeds, thyme and
turmeric. Return the turkey to the pan and stir in the rice, raisins and stock.
Cover and simmer for 15-20 mins until stock has been absorbed and rice is
cooked. Season with salt and pepper. Stir in the yoghurt and sprinkle with
chopped parsley to serve.
Can use chicken instead of turkey and can use leftover cooked
turkey/chicken instead of raw, in which case there is no need to fry the meat
in the first place and therefore only 1 teaspoon of oil will be needed instead
of 4.
