Lemony Couscous with Chicken and Chickpeas

Buy strips of ready cooked chicken. Add 2 tsp of ground coriander, 2 tsp of
cumin and 1 tsp of chilli powder and the juice of 1 lemon to the boiling water
you pour over 125g/4oz couscous. Leave for 10 minutes. When the grains have
absorbed the liquid, fluff up - then add the chicken strips and 200g drained chickpeas.
Sprinkle with plenty of chopped fresh parsley and serve with natural yogurt.
