CHICKEN TIKKA BALTI

Serves 4

 

450g chicken, cubed

 

Marinade:

1 tsp grated root ginger

1 clove garlic, chopped

1 tsp chillli powder

1 tsp paprika

½tsp turmeric

150ml low fat natural yogurt

juice of 1 lemon

 

Sauce:

1 medium onion, sliced

3 tomatoes, quartered

1 tbsp garam masala

1 tbsp fresh coriander, chopped

 

Mix all of the ingredients of the marinade in a large bowl and add the chicken, stirring well.  Cover and refrigerate for 3-4 hours.

 

Spray a non-stick pan with frylight and add the onion.  Cook gently until the onion is just brown, then add the chicken and all the marinade and cook for 20 mins.  Mix in the tomatoes, coriander and garam masala and cook for another 3-4 mins.

 

Serve with boiled rice.
