Microwave Smoked Haddock and Vegetables

Serves 2/prep and cooking time = 10 mins

Points per recipe = 2

Points per serving = 1

 

2x120g fillets of smoked haddock

Pepper

1 small courgette, sliced

1 small onion, thinly sliced

2 med tomatoes, skinned and chopped

1/2 red pepper, cored, de-seeded and cut into strips

1 tbsp of fresh chopped chives

 

1. Arrange the fish portions in a dish and season with pepper. Cover and cook on HIGH for 2 1/2- 3 mins. Spoon the juices over the fish and leave to stand for 1 min.

2. Meanwhile, place the courgette, onion, tomatoes and red pepper into a dish. Cover and cook on HIGH for 3 1/2 mins, stirring once. Spoon the vegetables over the fish, cover and cook on HIGH for 1 min.

3. Sprinkle with chives and leave to stand for 1 min before serving.
