Chicken Stir-Fry

Chicken Stir-Fry

Serves 1/prep and cooking time = 15 mins

Points per recipe and serving = 1

 

4 spring onions, sliced

A handful of beansprouts

50g mangetout

50g baby sweetcorn

Green and red peppers, sliced

A handful of mushrooms, sliced

1 med cooked skinless chicken drumstick, meat removed, and chopped

Soy sauce to taste

Salt n pepper

Canned spray oil

 

1. Spray a frying pan or wok with spray oil, heat and stir-fry the spring onions, mangetout, baby corn, peppers, mushrooms and bean sprouts for a few mins.

2. Add the cooked chicken and continue cooking to heat through, add soy sauce, season and serve.
