Hot Vegetable Couscous

75g dried
couscous
Any amount of 0 point veg, recommend using aubergine x 1, courgettes x 2, 2
whole carrots, 1 med onion,large stick celery, 2 leeks.
1 tbs curry powder (whatever strength you prefer)
1/2 pt boiling water
Simply place all prepared veg in large saucepan of water and boil until soft.
Meanwhile place couscous in heatproof bowl and pour on 1/2 pt boiling water,
stir with fork. Cover and leave for ten mins, periodically fluffing up with
fork. When veg cooked, drain most of water off but leave about 1/2 pint
remaining. Stir in curry powder. Stir in couscous over heat for about two
minutes, add more water if starts to stick.
A
very filling, nutritional and low point dish. Can be frozen and reheated in
microwave. Very tasty too! To make it a little more interesting you can add a
handful of sultanas and/or diced peeled eating apple as long as you allow for
the extra points!
