Gardeners Summer Pasta
Serves 1/prep and cooking time = 5 mins
Points per recipe and serving = 1
250g fresh tomatoes
75g cooked pasta
Chopped fresh herbs-basil,parsley,mint
Salt n pepper
1. Skin the tomatoes by placing them in a bowl and covering with freshly
boiled water and leaving them for 1 min, before removing them with a slotted
spoon. The skins will wrinkle and shrink away from the tomatoes, making them
slip away quite easily. Remove the seeds and dice into small cubes.
2. Stir the tomatoes into the pasta with the fresh herbs. Season to taste
and serve.
