CHOC-CHUNK-WISTERIA-ICECREAM

 

CHOC-CHUNK-WISTERIA-ICECREAM

1 large tub of low fat natural yoghurt
1 tub quark (200 g)
1 WW toffee yoghurt (or any other brand)
~2.5 tsp vanilla extract
~5 tbsp artificial sweetener
Approx 1/3 of a chocolate snack cake cut into thumbnail size chunks
(the recipe for chocolate snack cake is on oldchem's website www.oldchem.piczo.com and I'll try to remember to post it below)

Blend quark with the yoghurts thoroughly then stir in the sweetener and vanilla essence.
Stir in the chocolate chunks.
If you have an icecream maker, use this to freeze the mixture.
Otherwise place in the freezer and approx every 30 mins scrape all the frozen bits off the sides and give the mixture a good beating to break up the crystals.
The volumes above took ~ 3 beatings before the mixture was all solid.
As you beat it, the choc chunks will break up a bit.

I'm guessing that it needs to come out of the freezer ~ 20 min before serving to give it a chance to soften a bit.
