APPLE & PEAR SNOW

240g dessert apples, peeled, cored & chopped

1 medium pear, peeled, cored & chopped

squeeze of fresh lemon juice

pinch of mixed spice

1 egg white

30g caster sugar

 

Place apples and pear in a medium pan with 3 tbsp water, lemon juice and spice.  Cook gently until thick & pulpy.  Beat to a puree with a wooden spoon.

Spoon into a shallow ovenproof dish.  Preheat the grill

In a grease free bowl, whisk the egg white until thick and glossy and it forms a soft foam.  beat in the sugar and spoon on top of the fruit, shaping some peaks with the back of a spoon.

Place on the lowest rack of the grill & cook until golden brown on top.  serve immediately.
